After a long and cold winter period our bodies really need the vitamin refillment. It is a great idea to use different summer fruits and veggies in your daily cooking. This salad is full of healthy ingredients and flavours, which makes it incredibly delicious! It is an absolute must-have on your summer table, perfect as a starter or light lunch meal.

Ingredients:
Salad:
  • 2 cups watermelon, cubed
  • 100 g rocket salad
  • lime wedge
  • ¼ cup feta cheese, crumbled
  • 1 avocado, cubed
  • ½ jalapeno, thinly sliced
  • 2 springs mint, finely chopped
  • salt & pepper 
Dressing:
  • ⅓ cup olive oil
  • juice of 1 lime
  • ½ jalapeno, thinly sliced
  • 1 garlic clove, crushed
  • salt & pepper

Instructions:

  1. Prepare the dressing. Squeeze the lime into a bowl and mix it with the olive oil. Add jalapeno, garlic, salt and pepper. Set aside.
  2. Squeeze the lime juice on the watermelon cubes, add salt. 
  3. Plate the salad. Put the rocket salad in a bowl, add watermelon, jalapeno, avocado and feta cheese. Pour the dressing over and sprinkle with the mint garnish.
