Avoid storing carrots near apples, which emit ethylene gas that can give carrots a bitter taste. A light rinsing is all that's necessary for young carrots, but older carrots should be peeled. If carrots have become limp, recrisp them in a bowl of ice water.

Storage Tip: Remove tops before storing. Store in perforated plastic bag in the crisper. Don’t store with apples as the ethylene gas emitted by apples will make your carrots bitter.

Preparation Tip: Many of the carrots nutrients are in the surface, so just brush well under running water.
