Baked Potatoes or Jacket Potatoes, as they are called in the UK have been popular in England for many years, since the 19th Century. Today we can find a huge amount of variations of this dish, suitable for any taste and preference. Such meal is quite long in cooking time, but very simple in preparation, so you can even do it with your kids. Check out our option of Baked Potatoes and have a nice day!

Ingredients:

  • 6 small russet potatoes (about 200g each), scrubbed
  • 5 Tbsp butter, room temperature
  • 350g mushrooms, coarsely chopped
  • 2 large green onions, chopped
  • 100g cream cheese, room temperature (about 1/2 cup)
  • 1/3 cup sour cream
  • 1 1/4 cups grated white cheddar cheese

Instructions:

1. Preheat oven to 190-200 C. Pierce each potato in several places with a fork. Place all potatoes directly on oven rack and bake until tender, for about 1 hour.

2. Meanwhile, melt 1 tablespoon butter in a heavy large skillet over medium heat. Add mushrooms; sauté until they're becoming brown, stirring frequently, for about 7 minutes. Add green onions; stir until wilted, for about 1 minute. Set aside.

3. Cut each potato lengthwise in half. Scoop cooked potato flesh into large bowl, leaving the skin intact. Add cream cheese, sour cream and remaining 4 tablespoons butter and mash well. Mix in mushroom mixture and 1/2 cup cheddar cheese. Season to taste with salt and pepper. Mound mashed potatoes in potato skins. Sprinkle each half with 1 tablespoon cheese. Place on baking sheet.

4. Preheat oven to 200°C. Bake potatoes until heated through and cheese melts, for about 25 minutes.
