1. Honey-Mustard Baked Salmon With Vegetables

Preheat oven to 450 degrees. Place vegetables in a large bowl and mix with 2 tablespoons of the olive oil and salt. Spread vegetables over foil baking sheet and roast about 15 min until partially cooked. Remove the vegetables from the oven and reduce the temperature to 325 degrees. Place the salmon on top of the vegetables, skin side down. Whisk together the honey, mustard and a tablespoon of olive oil. Season the fish with a pinch of salt and spread half the honey-mustard glaze over the fish, reserving the remaining glaze for serving.

2. Baked Lemon Chicken And Potato

Preheat oven to 400 degrees and add some oil on a large baking dish. Season chicken on both sides with salt and pepper. Place chicken and chopped potatoes on baking dish. Thinly slice one lemon and slide lemon slices between some of the potatoes and chicken. Whisk together seasoning, garlic powder, onion, lemon juice, and butter. Drizzle mixture over chicken and potatoes. Bake for 25-30 minutes until chicken is cooked through and potatoes are fork-tender.

Preheat oven to 275 degrees. Take a bowl and combine 1 tablespoon of olive oil, garlic, rosemary, thyme, salt, and pepper. Spread the mixture all over the roast. Roast the meat for 15 minutes, then lower the heat to 200 degrees and roast for another 15 to 25 minutes until the meat is rare. Allow the meat to rest for about 15 minutes then thinly slice and serve. This roast beef also goes well with a herby creamy sauce to dip bites of meat into, and sweet potato as a side dish!

4. Zucchini Pie

Preheat oven to 325 degrees. Heat 1 teaspoon olive oil in a large skillet set over medium heat. Add green zucchini, half the scallions, half the garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cook until zucchini has softened and is beginning to brown, about 5 minutes, and stir frequently. Then, remove from heat and transfer to a large bowl. Repeat process with yellow zucchini and remaining teaspoon olive oil, scallions, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Transfer to bowl with cooked green zucchini and set it aside until cool. Drain and discard any liquid. Add parsley and eggs to zucchini, and stir. Pour into a deep baking dish. Cover with tomato and sprinkle with feta. Bake until set, about 1 hour. Serve hot.

5. Sweet Potato And Spinach Frittata

Heat oven to 275 degrees. Place sweet potatoes into a microwave-safe dish. Cover with a wet paper towel and microwave on high for 2 minutes. Heat a skillet over medium heat. Add cooking oil and then onions to heated oil. Fry quickly in a little hot fat until softened, about 3 minutes. Next, add in sweet potatoes. Saute until sweet potatoes are completely softened, about 5 minutes. Add in spinach leaves, in case there is a space - add in more. Once leaves are wilted, pour in the egg mixture. Stir until all ingredients are evenly distributed. Transfer to the oven and bake for 20 to 25 minutes.
